According to the present invention, there is provided a process for the preparation of a thermo stable B-Galactosidase enzyme which utilises simple vegetarian mediumthereby avoiding the use of beef extract and protease-peptone for the growth and induction at room temperature under static and microaerophilic conditions. The vegetarian medium, used for the production of B-Galactosidase enzyme of the present invention, includes the renewable carbon and nitrogen sources such as Soya been meal (defatted), soy peptone, yeast extract, lactose, sodium acetate, ammonium citrate. The vegetarian medium incorporates no animal product for B-galactosldase production.
