Tomatoes homozygous in rin and/or nor and/or Nr, or tomatoes heterozygous in combinations of rin, not or Nr are used to prepare a processed tomato product (e.g. sauce, juice, concentrates, passates, pastas, ketchups, etcetera) having good viscosity as well as good color. Preferably the tomatoes used also include color-enhancing genes such as old gold crimson (org), high pigment (hp), dark green (dg), intense pigment (Ip), or color enhancing transgenic genes.
