Ready to serve pearl moilee can be prepared by packing fried whole cleaned fish along with the moilee medium prepared by mixing coconut milk and other ingredients like spices, in retort pouches and processed at 121deg. C in a over pressure autoclave to a Fo value of 8.5. The processed pouches can be stored at ambient temperature of 28+_2deg. C in excellent condition for more than 12 months. The product was found to be commercially sterile throughout the storage period.
