The invention relates to process for the production of mineral water comprising the steps of optionally heating source water in heat chamber, followed by spraying the water from the heat chamber into vacuum chamber for evaporative cooling, removal of precipitated solids by pre-filtration, followed by filtration and storage of the mineral water thus produced.
