The present invention relates to a process for the manufacture of a modified lupin protein, which comprises adjusting an aqueous solution or suspension of lupin proteins of native origin having a dry mass content of from 0,1 to 20 % to pH 3 to 9, adding 0,01 to 10 % by weight of a protease, in relation to the dry weight of the lupin protein, incubating the protein solution or suspension at a temperature of from 5 to 70 °C until a degree of hydrolysis of from 1 to 30 % is obtained, and inactivating the protease, to modified lupin proteins obtainable by this process, to compositions containing said lupin proteins together with a fat-soluble active ingredient or colorant, and to the use of said composition for enrichment, fortification and/or coloration of food, beverages, animal feeds, cosmetics or drugs. Further, the invention relates to food, beverage, animal feeds, cosmetics or drugs containing said composition. (FIG. - Nil)
