This invention relates to a device for pricking of food products. Particularly such as peas, pulses, ginger and chillies. It has been advantageous to rupture the skins of these plant products before drying them. These pricked and dired products requrie less time to prepare for consumption. Drying of food products for making them convenient products is age old known technology. However, plant products needs to be dried at low temperatures to retain their valuable nutrients or delicate flavours. This causes long drying times and it is very difficut to bring the core moisture out of the product for the safe preservation of the product. One of the alternatives is to prick the product and make deep and minute holes to facilitate the removal of moisture from the core.
