This is an invention for the production of phytase enzyme under solid-state fermentation using agro-industrial residues such as rice bran, wheat bran or wheat straw as carbon source suitably supplemented with inorganic nitrogen preferably a ammonium salt such as ammonium sulphate, ammonium chloride, ammonium nitrate, ammonium phosphate at 0.25-2.5%. concentration and a sugar, fructose, glucose, sucrose, maltose, lactose at 0.05-0.35% concentration, which employs a fungal strain of Aspergillus ficuum. The process offers scope for scale-up for industrial production of this important feed enzyme. The aqueous liquid obtained as supernatant from processing has a phytase activity in the range of 56-63 IU/gds within a period of 72-80 hours.
