The present invention relates to a process for the preparation of homogeneous solid solvent-free granules having a size distribution of from 100 gm to 2000 µm and comprising : - at least 5% (w/w) of carotenoid, - gelatine and - a sugar, said process comprising the following steps: (f) preparing an aqueous solution of said gelatine and said sugar, (g) adding said carotenoid in said aqueous solution, (h) adding the preparation obtained in (b) to an oil to obtain an emulsion of granules, (i) cooling said emulsion to solidify the granules, and recovering and drying the granules.
