The invention concerns a device for monitoring dehydration operation during a freeze-drying treatment implemented in a chamber (10) connected to a vacuum line (18). The device comprises means for analyzing gases contained in the chamber (10) including an system (1) for ionizing the gases including a plasma source (3) in contact with the gases combined with a generator adapted to generate a plasma and a system for analyzing the ionized gases including a radiation sensor (20) located proximate the plasma generating zone connected to an apparatus (22) analyzing the evolution of the radiation spectrum emitted by the plasma. The plasma source is preferably produced by inductive coupling and the apparatus analyzing the radiation spectrum is an optical emission spectrometer.
